BREAKFAST
Teeny French Toast

8 slices white or French bread cut into quarters
4 large eggs
1/4 cup milk
nutmeg
cinnamon sugar
salt
pepper
butter
maple syrup

Beat the eggs in a soup bowl. Add the milk, nutmeg, salt, pepper and cinnamon sugar and mix well. Melt the butter on a skillet or in a frying pan. Dip the quartered bread slices into the egg mixture and brown on both sides. Warm some maple syrup (I use only real maple syrup) over medium low heat and add butter to taste. Drizzle over teeny slices of French toast.


DINNER
Italian Tomato Sauce

3 pounds fresh ripe tomatoes, cut up
2 cans tomato paste
oregano
chopped garlic
chopped onion
salt
black pepper
white pepper
cayenne pepper
basil
olive oil
tabasco
1 each yellow, red and green bell peppers
your favorite mushrooms
one or two fifths lambrusco or chianti
grated parmesan/romano mix

Saute garlic lightly in large pan and add tomatoes, onion, salt, black pepper, white pepper, cayenne and basil. Cook over medium high heat until mixture starts to bubble. Reduce heat to medium low, add tomato paste and simmer, stirring frequently. Dice and deseed bell peppers and add to sauce. Add one half fifth of the wine, reduce heat to low and continue simmering for about two hours, stirring frequently. Add more garlic and a few shakes of Tabasco and continue simmering for about two more hours, adding wine to thin sauce as needed. Slice mushrooms and add to sauce, stirring gently. Simmer another hour, adding wine as needed. Add more garlic and a few more shakes of Tabasco and simmer another hour, adding wine as needed. Add about 1/4 cup of grated parmesan/romano mix and simmer about thirty more minutes. Serve with your choice of pastas and/or meats.
